Raw Vegan Waldorf Salad

One of my all time favorite recipes! Sooo delicious and extremely healthy. Great for a quick lunch, lite dinner, or picnic. The secret to keeping it healthy is the use of zucchini as a base for the dressing, instead of traditional mayonnaise. Soaked cashews blended into the dressing give it richness with just bit of healthy fat. If you prefer a NO FAT version, feel free to omit the nuts. It still tastes wonderful. 

Everyone can benefit from adding more raw fruits and vegetables to their diet. It's easy, delicious, healthy, and fun to make. Enjoy!

Salad:
• 2 apples – chopped (I used Pink Lady)
• 1 tablespoon lemon juice
• 3 stalks celery – chopped on diagonal
• 1 cup grapes – sliced in half (combo reg/green)
• 1/3 cup raisins – golden or Thompson
• Handful of chopped walnuts (*omit for no fat )
• assorted greens, or butter lettuce cups

Vegan Mayonnaise Dressing:
• 1 med zucchini - chopped
• 1 scallion (Greens only) - chopped
• 2 dates – soaked for 30 min
• 1/4 cup raw cashews – soaked for 30 min (*omit for no fat )
• 1 tablespoon lemon juice
• 2 mint leaves
• 2 tablespoons fresh parsley – chopped
• water or coconut water if needed for blending

Chop the salad fruits and vegetables (except lettuces) and place in a medium serving bowl. Add the raisins and walnuts and stir to combine. Set aside.


In a high speed blender (such as a vitamix) place all of the vegan mayonnaise ingredients (except parsley) and blend on high until it becomes a creamy mayonnaise texture. Add a small amount of water or coconut water, a tablespoon at a time, until you reach the desired consistency. 
Add in the parsley and pulse a couple of times. Just enough to mix in, but still showing flecks of color.

Pour dressing over salad and mix till blended. Scoop the mixed salad onto a layer of greens on each plate. You can also use butter lettuce cups for a pretty presentation.


Serves 2 – 3 (one if you are really hungry!)
